Pancakes contain dry ingredients like flour, baking powder, and sugar.
Flour contains gluten, which is a protein complex that bonds with one another when activated by hydration, acting as a binding agent.
Through mixing, the gluten molecules create a sticky network through bonding with each other and become stretchy and elastic-like, just like what you would see in bread dough, forming tiny bubbles with the ability to contain the gas during leavening.
What are leaveners? Leaveners are ingredients often used in baking, like yeast and baking soda that make the batter or dough expand and rise.
You might wonder what is the use of Baking powder in pancakes? Well, Baking powder contains baking soda, which is a leavening agent often used in baking, which when activated, produces carbon dioxide gas.
Baking soda is activated with acid or when it’s heated above 122°F, so when you pour the pancake batter onto the griddle or pan, the heat activates the baking soda, creating bursts of CO2 gas, forming air pockets contained by the stretchy gluten protein which gives your pancakes that fluffy texture.
Sugar also plays an important role too. Not only does it add sweetness to pancakes, but it also helps make the pancake tender.
It does this by slowing down the gluten bonding process by drawing moisture away from it as the sugar bond with the liquid.

But don’t fret, we got some tips to help you achieve that deliciously fluffy pancake.
1. Avoid over-mixing your batter! As mentioned before, gluten protein bonds together and creates a sticky network when moistened; therefore, the more you mix, the denser it develops, creating lesser room for air bubbles to form. As a result, your pancakes will end up tough and rubbery.
2. Separate the egg yolk from the egg white. Adding the yolk into the mix first and beating your egg white separately into a froth, and folding it into the batter later, will make a huge difference in your pancakes. All those extra air bubbles from the egg white froth help enhance the fluffiness of the pancakes.
3. Avoid constant flipping of your pancakes. You should only flip your pancakes once during cooking. Flipping them too many times can deflate it, losing its fluffiness.
4. Make sure your baking powder is still fresh and has not expired. There are no dangers associated with using expired baking powder; however, it will no longer be potent enough to make the pancake rise and give it that fluffy texture.
5. Rest your pancake batter. Give it a good 15-minute rest as this step will give time for the gluten to relax, resulting in more tender pancakes. This step also allows more thorough hydration of the dry ingredients, reducing the lumps of flour in the batter, creating a more even texture.

Pancake Ingredients From Scratch
The ingredients needed for pancakes are fairly simple, and you most likely have it in your kitchen already.
It consists of dry ingredients like flour, baking powder, salt, and sugar, and wet ingredients like milk, egg, and melted butter.
Ingredients:
- 1 Cup of All-Purpose Flour
- 2 Teaspoons of Baking Powder
- 2 Teaspoons of Sugar
- 1/2 Teaspoons of Salt
- 1 Cup of Milk
- 1 Egg
- 2 Tablespoons of Melted Butter

Making the Batter
It is most ideal to mix your dry and wet ingredients separately first before combining them to make your batter.
Remember that we are trying to not over mix our batter, so mixing the wet and dry ingredients separately first, then add the wet to the dry, allows more of an even distribution of the ingredients throughout the batter with fewer strokes of the whisk.

Ingredients
- 1 Cup of All-Purpose Flour
- 2 Teaspoons of Baking Powder
- 2 Teaspoons of Sugar
- 1/2 Teaspoons of Salt
- 1 Cup of Milk
- 1 Egg
- 2 Tablespoons of Melted Butter
Instructions
- Have a mixing bowl ready with a sifter over it and pour in your flour, baking soda, sugar, and salt over the sifter. Start sifting the dry ingredients into the mixing bowl below.
- Once sifting is done, remove the sifter from the bowl and mix the ingredients together with your whisk. The sifting process helps break apart lumps of flour, aerating it and making the flour lighter, which helps with creating a fluffier pancake.
- Have your milk and egg ready at room temperature.
- Crack your egg and separate the yolk from the white, keeping them in separate bowls.
- Melt the butter in your microwave for about 30 seconds.
- Add in the egg yolk and melted butter into the milk and whisk.
- Make a well in the middle of your dry ingredients and pour the wet ingredients into it. Mix gently until there are no large lumps of flour. Let it rest for 15 minutes. Remember to not over mix your batter!
- Now, whisk the egg whites into a froth.
- Pour the frothy egg white into the batter and gently fold it in with a spatula.
- Heat up your skillet on medium heat.
- Once your batter is ready, lightly grease your skillet with butter and pour about 1/3 cup of batter onto it. Gently spread the batter around to make a circular shape.
- Let it fry until you see the top starts bubbling and the bottom is golden brown, then it's time to flip it onto the other side. Let it cook for another few minutes until it's nicely golden brown. Repeat for the remaining batter.
- Finally, plate your pancakes, add your favourite toppings, and enjoy!
